For today's lunch box I made apple crumble cookies and they were so DELICIOUS! I adapted a recipe from Donna Hay using what I had around the house and my personal preferences. I was also a little lazy and wanted to see if they would work if I just added everything to a bowl…and they did!

Recipe:
– 2 cups of oatmeal
– 1 cup of plain flour
– 1 teaspoon of baking powder
– 2 peeled and chopped apples
– 1 cup of brown sugar
– 1 egg
– 2 teaspoons of vanilla extract
– 1 cup of olive oil
– pinch of salt

Mix everything together, form a biscuit and bake at 180°C for about 20 minutes or until golden brown.
