Globally, when most people think of the UK, London is the first city that comes to mind. But today, much of the freshness, innovation and progress is taking place a little further west, in a smaller city.

Bristol is full of youthful energy and is one of the UK's most sustainable cities. Just a short drive from the city center is an area of unimaginable beauty…and it's our destination for today's episode.

Surrounded by a walled garden, The Ethicurean is perhaps the most conveniently located restaurant we have ever encountered. Not only is the Michelin Green Star holder surrounded by an organic farm, which supplies the majority of their fruit and vegetables, but beyond the walled garden is the most magnificent view of the Mendip Hills.

Chef Mark McCabe is changing the way we think about sustainable gastronomy. He took over from the previous head chef in 2019 and imbued the restaurant's philosophy with an even stronger sustainable orientation. Today he runs some of the most exciting kitchens in the country and I can't wait to show him to you.
