Baked zucchini and tomato mozzarella (side dish) Submitted by Nancy
2 cloves garlic
½ medium onion (I like red onions)
3-4 small zucchini
15 cherry or grape tomatoes (cut into ¼ or 1 large tomato)
1 cup grated Mozzarella cheese
1 tbsp. Olive oil
Salt and pepper to taste (optional)

Directions:
1. Preheat oven to 350 F
2. Dice the garlic, onion, zucchini and tomato
3. Grease a non-stick pan with olive oil and heat over medium heat.
4. Sauté the zucchini, tomatoes, garlic and onions until the vegetables are tender.
5. Reduce heat to low and simmer for 5 minutes.
6. Transfer Veggie to a baking dish. (I use a 9×13 so every bite has cheese)
7. Top with cheese

Bake for 10 to 15 minutes until the cheese is melted and lightly browned.
