Here's a delicious and easy recipe for pressure cooker salmon with garlic potatoes and greens:

Ingredients
For the garlic potatoes:

1 lb baby potatoes, halved
4 cloves garlic, chopped
1 tablespoon olive oil
Salt and pepper to taste
1 cup vegetable or chicken broth
For the salmon:

4 salmon fillets
Salt and pepper to taste
1 tablespoon olive oil
1 lemon, sliced
Fresh dill or parsley for garnish (optional)
For the Greens:

4 cups baby spinach or kale
1 tablespoon olive oil
Salt and pepper to taste
1 clove garlic, chopped
Instructions
Prepare the garlic potatoes:

Turn on the Instant Pot and select the “Sauté” function. Add the olive oil and minced garlic, sauté until fragrant (about 1 minute).
Add the halved baby potatoes, salt and pepper. Stir to coat the potatoes with garlic and oil.
Pour in the vegetable or chicken broth, then cancel the “Sauté” function.
Cook the potatoes:

Place a trivet over the potatoes inside the Instant Pot.
Close the lid, making sure the valve is set to /“Sealing”. Select /“Manual” or /“Pressure Cook” at high pressure for 5 minutes.
Once the cooking time is complete, perform a quick pressure release by carefully turning the valve to “Vent”.
Prepare the salmon:

While the pressure is coming down, season the salmon fillets with salt, pepper and a drizzle of olive oil.
Once the pressure is completely released, open the lid and place the salmon fillets on the trivet. Add lemon slices on top of the salmon.
Cook the salmon:

Close the lid, making sure the valve is set to “Sealing”. Select “Manual” or “Pressure Cook” on high pressure for 3 minutes.
Once the cooking time is complete, perform a quick pressure release by carefully turning the valve to “Vent”.
Prepare the green vegetables:

While the salmon cooks, heat the olive oil in a large skillet over medium heat.
Add minced garlic and sauté until fragrant (about 1 minute). Add greens (spinach or kale) and sauté until wilted and tender, season with salt and pepper to taste.
Serve:

Carefully remove the salmon and potatoes from the pressure cooker. Serve the salmon fillets over the garlic potatoes, accompanied by the sautéed vegetables.
Garnish with fresh dill or parsley if desired and enjoy!
