INGREDIENTS:
3 tablespoons of oil
2 pounds stew meat (or cubed chuck)
salt and pepper to taste
1 sweet onion, finely chopped
4 cloves of garlic, minced
2 cups of beef broth
2 tablespoons Worcestershire sauce
1 bay leaf
1 teaspoon Italian seasoning
1 sprig of fresh thyme or 1 teaspoon of dried thyme
Serve over cauliflower puree or riced cauliflower
fresh parsley, for garnish
INSTRUCTIONS
Add 2 tbsp. Pour the oil into the pan and turn it to the "Sauté" (high) setting.
Season 2 pounds of beef with salt and pepper. Add the beef and brown it on both sides. Withdraw. Put aside.
Add remaining 1 tbsp. oil and 1 onion cut into cubes. Scrape the bottom of the pan while cooking until tender (5 minutes). Add 4 minced garlic cloves and cook until fragrant (30 seconds).
Add 2 tbsp. broth and simmer, scraping the bottom of the pan, until nothing sticks to the bottom.
Add the browned beef, 2 tbsp. Worcestershire sauce, 1 bay leaf, 1 teaspoon Italian seasoning and 1 sprig fresh thyme (OR 1 teaspoon dried).
Cover with the lid, close the pressure valve and cook on HIGH pressure for 25 minutes, followed by a 10 minute natural release.
Carefully turn the relief valve and open the lid.
Serve over cauliflower mash or cauliflower rice.
