Remember that the key to a good pairing is the balance between the dish and the grape variety.

Plus, pairing wine with food should be fun. As you learn more, you will be able to experiment more based on your palette preferences. Basically, this means you can break the rules, eat and drink whatever you want.

You want to pair the wine with the most prominent flavor of the dish.

What you have in your mouth before tasting the wine will impact the taste of the wine.

Be aware of these types of pairings:

Congruent pairings pair wines with the same flavored foods, for example. Sweet Riesling with a sweet dessert. Usually, red wines result in congruent pairings.

Free pairings are pairings that do not have common flavors but complement each other e.g. Savory popcorn chardonnay. Usually, white wine choices result in complementary pairings.

Our favorite rules for pairing food and wine

Wine should have the same intensity of flavor as food
Food and wine should complement each other
You don't want your food or wine to mask each other's flavors.
Red wines pair well with bold meats
White wines pair well with light meats
Pair wine with sauce or seasoning, not meat
ex. Shrimp langoustines – pair with the butter sauce rather than the shrimp
Pair sweet wine with sweet foods
Wine should be sweeter than food
No champagne and cake because cake is much sweeter than dry wine
Sweet wine goes well with spicy dishes
The sweetness of the wine complements the spices used in various dishes
Salt and fat go very well with most wines
Especially wine with tannins
Ex. Crisps are delicious with most wines!
Pair wine and food from a similar region
Ex chianti and spaghetti
Tannins go well with fat

Pinor Noir – earthy flavors e.g. Pizza (Pinot Noir goes with most dishes, versatile)
Chardonnay – rich sauces e.g. Prawn langoustines

Sauvignon Blanc – spicy, chicken breast
Pinot Grigio – fish
Malbec – barbecue, burgers
Moscato – dessert (fruity)
Zinfandel – lamb
Syrah/Shiraz – spicy
Riesling – Asian dishes
