» EXOTIC FOODS

1. TALAD KAO MARKET: Mrs. Pan’s insect cart
ADDRESS: Soi Lat Krabang 5, Lat Krabang, Krung Thep Maha Nakhon 10520
OPEN: 2:00 p.m. – 10:00 p.m.

The night before Ms. Pan cooks the insects she will later sell at the market, her son goes to Khlong Toei, Bangkok's largest wet market, to buy a variety of insects. She starts cooking every morning in order to go to the market and sets up her cart at 2 p.m. To cook the insects, Ms. Pan first adds oil and chopped pandan leaves to a frying pan. Pandan leaves add a pleasant scent to insects while cutting the bitter taste. She adds her first batch of insects and lets them fry for about 30 minutes. She lets the crickets cook for only 15 minutes. To enhance the flavors, she doesn't clean the pan between bugs. Then, she goes to the market, to fill hungry bellies with insects!

2. TOY KUAY TEOW: Boat noodles (blood noodle soup)

OPEN: 8:00 a.m. – 6:00 p.m.

Toy Kuay Teow has been serving boat noodles for 50 years and is in its third generation. To make one of Bangkok's most popular noodle soups, combine chili dressing, pork, meatballs, vermicelli, pork blood, pork soup, green onions and herbs, bok choy, fried pork skin and fried flat noodles (optional). Beef noodles contain beef blood rather than pork blood.

3. J’KHAI SEAFOOD: Horseshoe crab eggs
ADDRESS: 1300/3-4 Prachachuen Road, Bangsue Bangkok
OPEN: 3:00 p.m. – 12:00 a.m.

J'Khai Seafood began when the owner started selling food from a small cart 34 years ago. It's now a multi-story restaurant in Bangkok, and their signature "steamed horseshoe crab roe with Thai curry" recently won Wongnai users' choice for best dish.

To prepare this tasty meal, they first steam the horseshoe crab, cutting open the bottom of the crab to remove all the eggs. Separately, create the seasoning by mixing Thai red curry paste, sugar, MSG, oyster sauce and carnation milk. Add the seasoning to a heated and oiled pan before adding the chicken egg and finger root. Let it sauté a little, then put everything back into the horseshoe crab shell. Take the horseshoe crab and grill it over hot charcoal until it is bubbling. Top it off with coconut milk, sliced lime leaves and carrots before diving in.
