Chickpea and lentil curry

– 1 cup of lentils (dry)
– 1 1/2 cup cooked chickpeas (about 1 can)
– 1 can of coconut milk (400 ml)
– 1 can of diced tomatoes (400 grams)
– 300 ml of vegetable broth
– 1 onion
– 3 carrots
Spices:
– 5 cloves of garlic
– 1 tablespoon of grated ginger
– 1 tablespoon of tomato paste
– 1 tablespoon of curry powder
– 1 teaspoon of cumin powder
– 1/2 teaspoon of turmeric powder
– 1/4 teaspoon of cayenne powder
– 1/2 teaspoon of salt + 1/2 teaspoon of pepper

Before serving:
– Juice of half a lemon
– 1 tablespoon of fresh parsley or coriander
– 1 handful of spinach

Directions
1. Fry the onions, carrots and garlic – fry for a few minutes
2. Add the ginger, tomato paste and all the spices (curry powder, cumin, turmeric, cayenne pepper, salt, pepper) – fry for a few minutes
3. Add the rest of the ingredients (coconut milk, vegetable broth, diced tomatoes, lentils, cooked chickpeas)
4. Cook for 20 to 30 minutes, until the lentils are tender
5. Before serving, stir in the juice of 1/2 lemon, a handful of chopped cilantro, a handful of spinach, salt and pepper as needed.
6. Serve with fresh lettuce and brown rice, garnish with additional cilantro and ENJOY!

Vegetarian chili:
– 1 medium white onion, diced
– 3-4 cloves of garlic, minced
– 1 red pepper cut into cubes
– 2 stalks of celery, diced
– 2 carrots cut into cubes
– (You can also add some mushrooms if you wish)
– 1 1/2 cup organic corn
– 2 cans of diced tomatoes
– 2 cups of low sodium vegetable broth
– 6 tablespoons of tomato paste
– 2-3 cans of beans (I like black beans and kidney beans)
Spices:
– 2 tablespoons chili powder
– 2 teaspoons of ground cumin
– 1 teaspoon of dried oregano
– 1 teaspoon of smoked paprika
– 1/4 teaspoon cayenne pepper
– Himalayan pink salt and pepper to taste

To garnish:
– Fresh coriander
– Juice of 1 lime

Directions:
1. Sauté the onion and garlic in water for a few minutes
2. Add the red pepper, celery, carrots and fry for a few more minutes.
3. Mix the remaining ingredients and simmer over low heat for about 20 minutes, until the vegetables are tender.
4. Serve with brown rice, garnish with fresh cilantro, lime juice and enjoy! 🙂

Oats with zucchini:
– 1/4 cup oatmeal (whole grain/rolled)
– 1 cup of water (more or less depending on the desired consistency)
– 1 grated zucchini
– 1 sliced banana
– 1 cup frozen wild blueberries (or berries/fruit of your choice)
– Spices: cinnamon, cardamom, vanilla
– Optional toppings – I like ground flax seeds

Directions:
1. Cook the oatmeal, zucchini and banana in water for a few minutes
2. Add the spices, stir
3. Before serving, add the blueberries
4. Garnish with desired toppings

Herb dressing:
– A handful of coriander/parsley or fresh basil
– 1/4 cup cashews
– 1/4 cup of water
– 1 clove of garlic
– 1 small piece of ginger
– Himalayan salt and pepper to taste

Blend everything in a high speed blender until smooth
Makes about two servings, you can store the other half in the refrigerator for the next day
